Dai's House of Unique Stink is a food place in Taiwan. This restaurant has had to move locations seven times after getting complaints from the shop next door due to the smells. That is unsurprising, since they literally serve a dish named “Stinky Tofu”.

One of Taiwan's favorite dishes is a fermented concoction full of live bacteria and a foul smell. Its pungent aroma is often compared to rotting garbage, rotting flesh, and the smell of feet. However, this food has a huge fan — one of whom is restaurant owner Wu Xu Biyin, Mrs. Dai.

According to the restaurant owner, fans of stinky tofu are like chili fans. Chili lovers, always feel the food to be not spicy enough. Likewise, one who loves stinky tofu, will always feel the dish is not “smelly” enough. Yet, other people can no longer hold the smell.

This stinky tofu starts with a good brine. "I use the fermentation technique inherited from my parents, I also need to add good quality vegetables," said Mrs. Dai, restaurant owner Wu Xu Biyin. Then the tofu will be dried and dipped in the fermented concoction. Tofu is dried first because dry tofu is like a sponge that can absorb all fermented elements and odors from fermented ingredients.

"For me, it's not only about the pungent taste and smell, but it is also good for health", said Mrs. Dai, when asked why she likes this dish. Tofu contains enzymes and nutrients that can help metabolism and strengthen a weak immune system. "Despite the pungent smell, this tastes very delicious, therefore the restaurant has become one of the favorite snacking places in Taiwain", said Mrs. Dai.

So, don't judge a food by its smell.
