The monastic plaster walls have been left largely untouched, their weathered surfaces and cracks intact, with any intervention offered mostly by artist-designed light fixtures and the occasional piece of carefully placed modernist furniture. Even from the outside, Paragon 700 is no ordinary Italian palazzo. Its striking, rusty red stone facade stands out within Ostuni's spectacular "white town," while the restored vintage cars outside offer clues to an unusual fusion of past and present. But to step inside is to enter another world completely.

The whimsical and extraordinary brainchild of the founders, interior designers, and partners Pascale Lauber and Ulrike Bauschke, they clearly saw the restoration of this mysterious building (its exact origin and construction date remain largely unknown) as an opportunity to unleash their wildest design instincts. . The sprawling bar area is Baroque via Tim Burton: statues of macabre grinning monkeys sit next to a broken reinterpretation of a Renaissance painting, while candles are dripping with the red wax line the table where the artist-designed sofa is upholstered in a silk tie sewn together. The hotel's 11 individually designed rooms are intentionally laid-back, with frescoed ceilings, warm lighting fixtures and stone-painted linens.

However, despite its flamboyant décor, health and sustainability are the priorities here. The spa, reached by a glass elevator and built into an atmospheric candle-lit underground cavern, features hydromassage basins, Turkish baths, Himalayan salt walls and even natural whirlpools dug deeper into the ground. Meanwhile, the hotel's commitment to micro-CHP energy, zero plastics and local construction materials is also noteworthy.
